AppHarvest is a rare play on food and farming technology. It specializes in "controlled environment agriculture" -- basically, indoor farms that utilize technology to increase yields from fruits and vegetables by 30 times per acre, while using 90% less water than traditional farming methods.

What Sent The Stock Falling
AppHarvest's ( APPH) second-quarter was not very pretty. After weak revenue results, missing on both the top and bottom line, along with drastically cut guidance, the stock fell nearly 30%, and then continued to fall below $8 per share by the week's end.
A Silver Lining
After earnings, AppHarvest stock fell off a cliff, and then it continued to fall throughout the rest of the week.
What To Do Now
Despite all of this, it does not change the fact that there is a growing demand for sustainably-produced fruits and vegetables in the U.S., and AppHarvest is operating in this market. The current demand is large, and it will likely get larger during the next 10-20 years.
The market did not drop because of Delta variant. Delta has been in the news for months
I will continue to be a long-term supporter of AppHarvest and its mission, but the reality of their mission was damaged in this quarter. While I am not recommending selling the stock, investors need to watch extremely closely. AppHarvest shareholders need to focus on three things: quality of the product, pricing power, and operational expansion.
