A thumbhole stock is just to give some of the benefits of a pistol grip to the shooter. It allows a more relaxed, straight positioning of the wrist (like a pistol grip). They started showing up more after the 'ugly gun' laws of the late '80s.

Even if an official definition doesn't exist, we can affirm that thumbhole rifle stocks have a hole in the wooden stock that allows the thumb of the trigger hand to penetrate into or through the stock while firing. On a rifle that I'm just shooting off a rest and not in any big hurry, I don't mind a well-fitted thumbhole stock.
