The 302 crank has a longer stroke, which is what gives it the 302 displacement rather than the 289. Thus, Ford made the cylinders longer on the 302 If you put a 347 stroker crank in a 289 block, the piston skirts will drop out the bottom of the cylinders. You can stroke a 289, but not with the length of stroke assoicated with a 347. 326 or 331 probably is as far as you can go. Someone at Eagle or at Coast could probably tell you what displacement to go for if you stroke the 289.
